  Edirne-based Arda Bağcılık has been a favorite winery of mine for years now. One of the first I ever visited in Turkey, this family-run winery makes wines that I think get overlooked. On the one hand, it's terrible because they're not getting the recognition I think they deserve. On the other, it keeps the prices down and I am not mad at that! While they make an outstanding Narince and have recently really begun to highlight Thracian native Papazkarası, their focus rests largely on international varieties.   I am slowly slowly coming around to rosé. Well, I say "slowly slowly" but I'm discovering more and more wines that I enjoy. In fact, I dare say that I might be a full-on fan of rosé. I've avoided a fair number of wines because of my previously anti-rosé stance and I'm trying to correct that. Now I'm digging up pink wines I'd previously bypassed and have uncovered a couple gems! Prodom, one of Turkey's Aegean wineries based outside İzmir has made a rosé for years. I've never tried it. But when one of my favorite wine shops, Mensis Mahzen, recommended it, I decided to give it a go.

  One of Turkey’s most popular culinary traditions is that of rakı balık. Literally translated as rakı fish, this is the great tradition that comes from the Turkish meyhane, or tavern. Rakı is a grape spirit-based, anise-infused liquor similar to Greece’s ouzo and Lebanon’s arak. In Turkey, this drink, served over ice and diluted with water, accompanies traditional fish and small bite meze. While a modern tradition, and no offense to those who love the rakı balık, the heavy anise flavor of rakı doesn’t really go with a lot of foods. It’s time to make room on the meze table for wine.   Many of us have heard the old adage to pair white wine with chicken and fish and red wine with red meat (like beef and lamb). Happily, that advice has pretty much gone out the window over the last years. For one thing…where does pork live in this configuration? What happens when you put a cream sauce on red meat? White wine with delicate fish and seafood sure…but what about heavier (dare I say “meaty”) fish like swordfish or tuna steak? It’s called a “tuna steak” for a reason after all! Based in Kalecik, join the ranks of wineries like Tomurcukbağ and Vinkara in focusing on the local grape, Kalecik Karası. So much focus in fact, that they make only two wines. Both 100% Kalecik Karası, one a rosé, the other a red. Occupying a place in the winery's mid-range line up, the Pürneşe series includes a red blend and a blush. I have had them both but it was the blush that really stood out for me. Vino Dessera brings in grapes from vineyards across Turkey. For the Pürneşe Blush, they used Çalkarası and Kalecik Karası from Denizli in the western Aegean. Kalecik Karası we frequently see as both varietal and blended rosés. Very few wineries really work with Çalkarası though.   7Bilgeler (or Yedi Bilgeler as you prefer) has long produced wines I've liked and admired. My one issue was that all the wines were international grape-based. No longer!   Given my recent complain about the current trend for blanc de noir Papazkarası and the lack of good red wines made with it, I thought it was time to take a look at Chamlija's newest blend, PaPiKa.  Chamlija is one of the few wineries really paying attention to this grape. The winery produces a handful of wines with Papazkarası (or Papaskarası as it's sometimes spelled) including varietals like the Kara Sevda and blends. Chamlija also produces the grape in all colors possible.   I realized a few months ago that I have tried every wine from Urla Şarapçılık except the winery's rosé. Since I don't generally hold rosé in the highest opinion it's not a surprise that I hadn't had it. However, I must do my best in my quest to try all the Turkish wines!  Based in the southern İzmir district of Urla, Urla Şarapçılık heads up the Urla Bağ Yolu. Its wines include a series of red blends, varietal Boğazkere (grown onsite vs brought in from Diyarbakır) and Patkara, varietal Sauvignon Blanc, Chardonnay, Sungurlu, Gök, a white blend, a sweet white, and this rosé.
