  Keeping true to its brand, last year when 7Bilgeler released a new white blend, the winery named it for an ancient philosopher. The 7Bilgeler Herakleitas is a little east meets west including as it does Chardonnay usually used in the winery's Anaxagoras wines and Emir from the winery's Vindemia series. I used to really love 7Bilgeler and its wines. Despite the fact that all the wines involved international grapes. Then the winery released the Vindemia series with native grapes and I got so excited!   If you know me, you probably know that I don't like Kavaklidere. My dislike has nothing to do with its size; it being one of the largest (the largest?) wineries in Turkey. I don't like the attitude. Then last autumn, the winery released a new wine: Kavaklidere Cotes d'Avanos Emir. And darn it all, it's really good. Cappadocia and Emir   Emir is THE grape of Cappadocia. While now found in pockets around Denizli in the Aegean, the purity and linear quality of Emir requires the high elevations and volcanic soils of Cappadocia.   Located a little over an hour's flight from Istanbul, Cappadocia is the jewel of central Turkey. Its surreal "fairy chimney" rock formations, hot air balloon tourism, and network of underground cities and cave churches has made it one of the country's top attractions—for good reason. Just as impressive but far less known, however, is the region’s history as an important wine center that predates Christianity and where some of the world’s first viticultural legislation was introduced. Wherever you happen to be, you know you’re on land created by violent, fiery, eruptions. But not all volcanic regions are so obvious.   One of Turkey’s most popular culinary traditions is that of rakı balık. Literally translated as rakı fish, this is the great tradition that comes from the Turkish meyhane, or tavern. Rakı is a grape spirit-based, anise-infused liquor similar to Greece’s ouzo and Lebanon’s arak. In Turkey, this drink, served over ice and diluted with water, accompanies traditional fish and small bite meze. While a modern tradition, and no offense to those who love the rakı balık, the heavy anise flavor of rakı doesn’t really go with a lot of foods. It’s time to make room on the meze table for wine.   Many of us have heard the old adage to pair white wine with chicken and fish and red wine with red meat (like beef and lamb). Happily, that advice has pretty much gone out the window over the last years. For one thing…where does pork live in this configuration? What happens when you put a cream sauce on red meat? White wine with delicate fish and seafood sure…but what about heavier (dare I say “meaty”) fish like swordfish or tuna steak? It’s called a “tuna steak” for a reason after all! The best pairing advice has nothing to do with your protein (or vegetable if you swing that way).

  7Bilgeler (or Yedi Bilgeler as you prefer) has long produced wines I've liked and admired. My one issue was that all the wines were international grape-based. No longer!   The Urla district of İzmir in Turkey's Aegean region has become a hotbed of trendy wineries. Many belong to the Urla Bağ Yolu (the easiest wine route to navigate).
